Recipe(tried): Pork Loin Florentine with Broiled Tomato and Zucchini, Wild Rice, Asian Salad with Sesame Orange Dressing and Won Ton Strips

I have been catching up on all the old CSI DVD's that the library has while ironing today. I really enjoy that show and tonight on TV is a new episode.
It has been threatening rain all day but not a drop yet. So I had to go out and hand-water all the marigolds. Hopefully, it will rain later and I won't have to water the lawn.
Tonight for dinner we will have:
Pork Loin Florentine with Broiled Tomato and Zucchini
Uncle Ben's Wild Rice
Asian Salad with Sesame Orange Dressing and Won Ton Strips
Garlic Bread
Mama's Sweet Iced Tea
Here are the recipes:
PORK LOIN FLORENTINE WITH
BROILED TOMATO AND ZUCCHINI
Servings: 2
2 boneless pork loin chops, butterflied
spinach leaves
mozzarella cheese, shredded
1 garlic clove, crushed
Lawry's Perfect Blend Seasoning & Rub for Chicken & Pork
breadcrumbs
olive oil
1 tomato, diced
1 small zucchini, sliced thick and halved
salt and pepper to taste
Preheat oven to 350 degrees F.
Drizzle olive oil in a glass baking dish. Layer a few spinach leaves over.
Open the butterflied chop and put between two sheets of plastic wrap. Pound to thin a bit. Season with Lawry's Perfect Blend. Layer spinach and mozzarella cheese and roll up pinwheel style.
Roll the meat side in breadcrumbs and lay the pork roll on the spinach leaves. Sprinkle some more Perfect Blend over and repeat with the next piece of loin chop.
Crush the garlic clove over the two pieces of meat. Spread the diced tomato and the zucchini all around the meat and salt and pepper the veggies. Drizzle a little bit more of olive oil over all.
Bake for 45 minutes at 350F.
Serve with Uncle Ben's Ready Rice Long Grain & Wild

torn Romaine Lettuce
Carrot curls
Sugar Snap Peas
Sweet Dried Cherries
Won Ton Strips
2 Tbsp. Sesame Orange Dressing per person
