PORK LOIN WITH DRIED PLUMS AND APRICOTS
1 (17 oz.) Hormel Always Tender Original Flavored Center Cut Pork Loin Filet
4 tablespoons olive oil, divided use
1/2 cup dried plums, finely chopped
1/2 cup dried apricots, finely chopped
Preheat oven to 400 degrees F.
Butterfly pork loin by cutting end-to-end so it folds open like a book. DO NOT CUT INTO 2 PIECES. Open pork loin and with a flat meat mallet or the side of the hand, pound the pork loin so it is evenly flattened.
Mix plums and apricots with 2 tablespoon of olive oil. Spread mixture on the pork loin. Roll up the pork loin, enclosing fruit mixture inside. Secure roll with toothpicks (putting them straight into the roll), spacing about 1-inch apart.
Place remaining olive oil in an ovenproof skillet over medium-high heat. When oil is hot, add the pork loin to the skillet.
Brown well on all sides then place skillet in the oven and bake for 20 minutes or until internal temperature of pork loin reaches 155 degrees F.
Before serving, slice pork loin into medallions.
Serve with oven roasted new potatoes, carrots and onions.
