Recipe(tried): Pork Roast Normandy

PORK ROAST NORMANDY

1 small boneless pork tenderloin (for 2 people)
salt
freshly ground pepper
2 tbsp calvados (apple schnapps)
1/2 cup chicken broth (low sodium)
1/2 cup heavy whipping cream
2 tbsp butter
1 golden delicious apple, peeled, cored and cut into 8 segments
8oz sliced mushrooms

Season roast with salt and pepper. Place in baking dish. I add about a half cup of chicken broth to the pan for baking.
Bake approx 45 min at 325 degrees or until done.
Pour juices from baking dish into a sauce pan. Add the other 1/2 cup chicken broth and bring to a rolling boil. Add calvados and cream. Boil hard for about 15 minutes or until the consistency of a thick gravy.
In the meantime, saut the apples in butter, until tender and golden brown. In a separate pan saut the mushrooms in butter.
Combine the mushrooms with sauce and pour over roast. Garnish with apple slices.
