PORK-ZUCCHINI STIR-FRY
1/4 lb. boneless pork, cut into strips
2 tablespoons chopped onion
1 tablespoon oil
1/2 cup sliced zucchini
6 mushrooms, sliced
1/4 teaspoon marjoram
1/4 teaspoon salt
Freshly ground pepper
2 tablespoons beef broth
Hot cooked rice (for serving)
Saute pork and onion in oil over high heat until the pork is lightly browned.
Add the zucchini, mushrooms, marjoram, salt, pepper and broth. Cook, stirring for 5 to 10 minutes or until the vegetables are tender and the pork is cooked through.
Serve with cooked rice.
Makes 1 serving
