Recipe: Risotto with Shrimp (Hunt's Tomato Paste, Let's Cook Italian)

RISOTTO WITH SHRIMP


1/4 cup olive or salad oil
1 onion, chopped
1/2 cup chopped green pepper
1 1/2 cups uncooked rice
1 (6 oz.) can Hunt's Tomato Paste
2 1/2 cups chicken stock or bouillon
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1/2 teaspoon thyme or basil
2 cups cleaned, cooked shrimp
1/2 cup cooked peas (optional)

Heat oil in heavy pan that has tight lid. Fry onion and green pepper in hot oil until golden.

Add rice; cook and stir only till lightly tanned, not brown.

Mix Hunt's Tomato Paste and rest of ingredients, except shrimp and peas. Stir into rice. Cover tightly. Turn heat to lowest position. Simmer without raising lid or stirring for 30 minutes.

Stir in shrimp; add peas if desired. Cover and heat 10 minutes.

Makes 4 servings
