Thomas - in reading your recipe, it seems like there is an apple base to your recipe. And prawns being light fare, I would think a nice, light salad preceding your dinner would be wonderful. I make this for company - it's not only beautiful but very tasty. For company, I perfer to serve individual salad plates that I set up ahead of time and refrigerate until it's time to dress them just before serving.
APPLE WALNUT/SPRING MIX SALAD WITH GREEN APPLE DRESSING
Romaine lettuce cut up how you like it
Partial package of organic spring mix lettuce
Small container of plain goat cheese
Approx. 1 cup of walnuts, chopped coarsely OR the thin-sliced candied almonds found in small packages
One large Granny Smith Apple, cored, and sliced thinly (don't peel) If you're making a really big salad all these ingredients can be adjusted upwards
Put lettuces into big flat type salad bowl. Mix them up. Top with apple slices in decorative overlapping pattern. Then crumble the goat cheese over that. Coarsely chop the walnuts and sprinkle over goat cheese and apples. At this point, it can be covered with plastic wrap and kept all day in refrig if needed. DO NOT DRESS salad until just before serving.
GREEN APPLE DRESSING:
-1 large can of frozen apple juice concentrate (If you can find Granny Smith frozen concentrate (Publix) that's the best, but any other frozen apple concentrate will do just fine, too)
-Approx. 3-4 heaping tablespoons of Miracle Whip Salad dressing - I just scoop it out of the jar with a large spoon, I don't measure. (mayo doesn't work as well)
- 1/4 cup canola or other light vegetable oil
- 1/8 cup rice wine vinegar
-Poppy seeds - just shake a bunch in - approx a tablespoon?
-Salt and pepper to taste
In food processor, place all the dressing ingredients and pulse till well blended.
This can be made and stored in covered jar in refrig. for at least a week! Just shake it up before pouring it over the salad. I've done it by pouring it over the entire salad in the big bowl just before serving it, and then I've also done individual salad plates and poured it on then, or let each person pour their own on. This makes a large bottle of dressing, and you don't need to use it all - save some in the refrig. for using the rest of the week on other salads.
