Recipe: Potato Pancakes (Calumet Baking Powder, 1920)

Side Dishes - Potatoes
POTATO PANCAKES

1 pound grated potatoes
1 finely chopped onion
1 beaten egg
1/2 cup sifted flour
1 level tsp Calumet Baking Powder
1 level tsp salt
1/8 tsp pepper

Sift flour, baking powder and seasoning.

Beat the egg and combine with potatoes and dry ingredients.

Drop by spoonfuls on a hot griddle, flatten with a spoon and fry brown on both sides.

Top with butter or sour cream. German way is topped with applesauce. Do not use syrup as this is not a breakfast pancake.
