SCALLOPED POTATOES WITH BASIL
3/4 to 1 lb potatoes, thinly sliced
3 to 4 tablespoons grated onions
salt and pepper
flour
butter
1/4 cup milk
1/4 cup any beef, chicken, or vegetable broth
4 to 5 fresh basil leaves, coarsely chopped
Making 2 layers, layer potato slices in a shallow well-buttered baking dish. Sprinkle each layer well with salt and pepper, flour (about 1 tablespoon per layer), and bits of butter.
Pour milk and stock over potatoes. Tuck basil in and around potatoes.
Bake at 325 degree F for 45 minutes to 1 hour or until potatoes are just tender. Add milk and/or stock during baking if needed.
