Recipe: Mom's Day Pancakes (using cranberry sauce, Bisquick recipe, 1970's)

MOM'S DAY PANCAKES

1 (16 oz) can whole cranberry sauce (for serving)
2 cups Bisquick baking mix
1 egg
1 1/3 cups milk
2 cups finery chopped unpared apple
2 tbsp sugar
1 tbsp lemon juice

Heat cranberry sauce; keep warm over low heat.

Beat (dry) baking mix, egg and milk with rotary beater until smooth. Fold in remaining ingredients.

Pour batter from 1/4 cup measuring cup onto hot griddle. (Grease griddle if necessary.) Bake until bubbles appear. Turn and bake other side until golden brown.

Serve warm cranberry sauce over pancakes.

Makes about 18 pancakes
