Recipe: Tomato, Basil, and Broccoli Chicken (using Rice-A-Roni)

TOMATO, BASIL, AND BROCCOLI CHICKEN

4 boned and skinned chicken breast halves
1 teaspoon dried basil
2 tablespoons margarine
1 package chicken flavor Rice-a-Roni
2 cups broccoli florets
1 medium tomato, seeded, chopped
1 cup shredded mozzarella cheese

Sprinkle chicken with basil.

In large skillet, melt margarine over medium-high heat. Add chicken, cook 2 minutes on each side or until browned. Remove from skillet, reserving drippings.

In same skillet saute rice-vermicelli mix as package directs. Add 1 1/2 cups water, Special Seasonings and chicken. Bring to a boil. Cover and reduce heat. Simmer 15 minutes.

Add vegetables. Cover. Simmer 5 minutes or until liquid is absorbed and chicken is cooked through.

Sprinkle with cheese. Cover. Let stand 3 minutes before serving.
