Recipe(tried): Potato Salad (using bacon, ranch dressing, and Cajun seasoning)

POTATO SALAD

This is a creamy tasty salad.

1 pinch garlic salt
water
2 pounds clean new red potatoes, scrubbed
6 eggs
1 pound bacon
1 sweet onion, finely chopped
1 stalk celery, finely chopped
1 roasted sweet pepper, finely chopped
1 cup mayonnaise
1 cup Three Cheese Ranch Dressing
1 teaspoon Cajun seasoning

Bring a large pot of water seasoned with garlic salt to a boil. Add potatoes and cook until tender but still firm, around 15 minutes. Drain and set in refrigerator to cool.

Place eggs in a pan with cold water cover and bring to a boil. Immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove and cool, peel and chop.

Cook bacon in a large deep skillet. Cook over medium heat evenly done. Drain and crumble and set aside.

Chop cooled potatoes leaving skin on. Add to a large bowl, along with onions, celery, and roasted sweet pepper.

Add mayonnaise, Three Cheese Ranch Dressing, and Cajun seasoning mix and let chill.

Makes 12 servings
