NEBRASKA CORN FRITTERS

1 1/2 cups whole kernel corn, drained
2 eggs
1/2 teaspoon salt
Dash of pepper
1 teaspoon sugar
3 Tablespoons all-purpose flour
Butter or margarine
Mix all ingredients except butter together.
Heat 2 Tablespoons butter in a large skillet. Drop batter by double tablespoonfuls to make small oval cakes. Cook over medium heat for 5 minutes, or until browned on both sides. Turn only once. Add more butter or margarine to skillet if necessary to keep corn fritters from sticking.
Makes 4 servings
