Recipe: Garlic Soup Royale (not General Sutter's)

GARLIC SOUP ROYALE

1/2 olive oil
40 garlic cloves
2 cups chopped onions
1 cup chopped peppers
1/2 cup chopped carrots
1/2 cup chopped celery
1 cup flour
1 (28 oz) can Italian plum tomatoes, chopped
1 cup bread crumbs
5 cups rich chicken stock
1 tbsp oregano
1 tbsp thyme
1 tsp salt
1/2 tsp cayenne pepper
1/2 tsp curry
1/2 tsp black pepper
1 cup heavy cream and/or 2 cups skim milk
Chopped scallions (for garnish)

In the olive oil, saute garlic, onions, peppers, celery and carrots until soft.

Stir in flour and mix thoroughly. Cook 5 minutes while stirring. Do let not burn.

Add tomatoes, breadcrumbs, stock, and seasonings. Bring to boil. Simmer 15 minutes. Let cool slightly.

Add cream and/or milk while pureeing through blender.

Garnish with finely chopped scallions, and serve very hot.
