HONEY OAT BRAN MUFFINS
Source: Secrets of Fat Free Cooking By Sandra Woodruff
Yield: 12 muffins
1 cup oat bran
1 1/2 cups non fat buttermilk
1 1/2 cups whole wheat pastry flour
1 teaspoon baking soda
1/4 cup honey
2 egg whites, lightly beaten
1/2 cup chopped dried apricots or prunes or raisins
1. Combine the oat bran and buttermilk in a medium sized bowl. Stir to mix well, and set aside for 15 mins.
2. Combine the flour and baking soda in a large bowl, and stir to mix well. Add the oat bran mixture, honey, and egg whites and stir just until the dry ingredients are
moistened. Fold in the apricots or prunes or raisins.
3. Coat muffin cups with cooking spray, and fill 3/4 full with the batter. Bake at 350 F for about 16 to 20 mins, or just until a wooden toothpick inserted in the center of a muffin comes out clean.
4. Remove the muffin tins from the oven, and allow them to sit for 5 mins before removing the muffins. Serve warm or at room temperature.
