Recipe: Prune Puree (substitute for butter or margarine in baking)

Tips and Tricks
PRUNE PUREE

"Can be substituted 1:1 for butter or margarine in baking recipes."

2 2/3 cups pitted prunes (dried plums), chopped
2/3 cup hot water
4 tsp vanilla (optional)

Pour 2/3 cup boiling water over the prunes, stir, cover and let sit until the mixture is warm.

Place in food processor with vanilla and puree until smooth.

To store, cover and refrigerate up to one month.

Makes 2 cups
