Recipe: Mango Salsa (using scallion, basil and lime)

Toppings - Salsas
MANGO SALSA

1 ripe mango, peeled, seeded and diced
1/4 cup chopped scallion
1/4 cup diced red bell pepper
1/4 cup chopped fresh basil (or cilantro)
Juice of 1/2 lime

Combine all ingredients. Stir to blend.

SERVING SUGGESTION:
Delicious served over a mixture of fresh salad greens. Garnish salad with sliced cucumber and wedges of tomato (or chop cucumber and tomato and combine with the salsa).

Makes about 4 servings
