Salads - Fruit, Gelatin
Quick and Easy Exotic Fruit Salad

You will need:
1 cup dried mango chunks, sliced
1 cup dried papaya chunks, chopped into small bite sizes
1 cup dried pineapple chunks, chopped into small bite sizes
1 lb. can fruit cocktail, drained
1/2 cup dry coconut flakes
1 cup maraschino cherries
2 small cans of sweetened condensed milk
1 1/2 cups half and half

Pre-soak the dried fruit in water for a couple of hours. Drain the water. In a large bowl mix, the dried (but now soaked) fruit, the fruit cocktail, coconut flakes, cherries (drained), the condensed milk and half and half. Mix well. Chill for at least 3 hours. Serve either as is or with vanilla ice-cream.

For an even more exotic twist you can add crushed pistachio nuts and ground green cardamom seeds. Enjoy.
