Recipe: Fruit Salad with Jalapeno-Citrus Dressing (using melon, strawberries, pineapple and papaya)

FRUIT SALAD WITH JALAPENO-CITRUS DRESSING

1/2 small honeydew melon
1 large ripe papaya, peeled, seeded cubed
1 pint fresh strawberries, stemmed and hulled
1 (16 ounce) can pineapple chunks, drained
Jalapeno Citrus Dressing (recipe follows)
Fresh mint (optional, for garnish)

Scoop seeds from melon. Remove fruit from rind with melon baller or cut into wedges. Remove rind and cut into cubes. Place in large bowl. 

Add remaining fruits and Jalapeno Citrus Dressing; gently toss to combine. 

Serve immediately or cover and refrigerate up to 3 hours. Garnish with mint. 

Makes 6 servings
