Recipe(tried): Quick and Easy Satay Chicken Burgers

We have this for dinner at least once a fortnight as it takes about ten minutes to prepare and about five minutes to cook. Quick and easy as promised.

Satay Chicken Burgers

800g Minced Chicken
2/3 cups Satay Sauce
1/3 Cup Yoghurt (I use greek style)
1 Cup Breadcrumbs
1 Tablespoon Fresh Coriander Chopped
4 Foccacia Buns
Sliced cucumber
Sliced Carrot

Combine chicken, 1/3 cup satay sauce, coriander and breadcrumbs. Shape into patties and cook in a frypan. Whilst cooking split foccacia into halves and toast lightly. Combine remaining 1/3 cup satay sauce and yoghurt. When patties are cooked place on the foccacia, top with a slice of cucumber and carrot and top with combined yoghurt, satay sauce.

Fried onion makes a change from the carrot and cucumber but still use the sauce.
