QUICK AND SAVORY BROWN RICE
2 tablespoon extra virgin olive oil
1 cup long grain brown rice, uncooked
1/3 cup finely chopped green pepper
1/3 cup finely chopped onion
2 cups double-strength (or condensed) chicken broth (beef or vegetable consomme may be used)
1 cup sliced mushrooms
1/8 teaspoon paprika
Start heating olive oil over medium heat in a medium saucepan. Stir in rice and cook for 3 to 4 minutes or until lightly toasted, stirring frequently to keep from burning.
Add green pepper and onion, and cook for about 1 1/2 minutes.
Stir in broth, mushrooms and paprika. Bring to a boil, reduce heat to simmer, and cover saucepan.
Cook for about 25 minutes, until water has been absorbed and rice is cooked. Remove from stove, let sit covered for a few minutes, and enjoy!
Makes 6 servings
