QUICK NUT FUDGE
1 (1 lb.) box powdered sugar
1/2 cup unsweetened cocoa powder
1/4 cup plus 2 tsp. butter
1/4 cup milk
1 tsp. vanilla
1/4 tsp. salt
3/4 cup pecans, chopped
1/2 cup chopped maraschino cherries, well drained
Combine all ingredients except pecan and cherries in top of double boiler. Bring water to a boil. Reduce heat, cook stirring constantly until smooth.
Remove from heat, stir in 1/2 cup pecans and all the cherries. Quickly spread mixture into a lightly buttered 9x5x 3 inch loaf pan, sprinkle with remaining pecans, chill.
Cut into squares. Store in refrigerator.
Makes 3 1/2 dozen pieces
MICROWAVE CHERRY FUDGE
1 (1 lb.) box powdered sugar
1/3 cup unsweetened cocoa powder
Dash salt
1/3 cup milk
1 tbsp. vanilla
1/4 lb. butter (1 stick)
1 cup pecans, chopped
1/2 cup chopped maraschino cherries, well drained
Put sugar, cocoa and salt in bowl. Place milk and butter on top of dry ingredients. Cook 2 1/2 minutes in microwave.
Stir in nuts, cherries and vanilla. Pour into buttered dish. Chill, cut into squares.
