Recipe(tried): Sesame Brittle with Orange Flower Water (microwave)

SESAME BRITTLE WITH ORANGE FLOWER WATER

Butter for greasing the foil
11/2 cups white sesame seeds
3/4 cup sugar
3/4 cup natural honey
1 cinnamon quill
2 tbsp water
1/2 tsp orange flower water
1/4 tsp baking soda

Lightly grease a 24-inch length of foil with butter.

Heat a large pan over medium-high heat. Add the sesame seeds and cook, stirring constantly, until light golden and beginning to pop, 2 to 21/2 minutes.

Transfer to a 6 quart bowl. Add the sugar, honey, cinnamon, and water and stir to mix. Microwave on high for 3 minutes. Stir and continue to microwave for 1 minute. Stir again and microwave for 3 minutes.

Remove and whisk in the orange flower water and baking soda, stirring until the bubbling stops.

Immediately and carefully, pour the candy onto the foil. Set aside to cool and harden for at least 1 hour.
