QUICK VEGETARIAN MOLE
2 tablespoons peanut or safflower oil
1 medium red onion, chopped
1 large red bell pepper, seeded and chopped
2 garlic cloves, crushed
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 pound sweet potatoes, cut into cubes
1 pound canned chopped tomatoes (about 2 cups)
1 pound canned kidney beans (about 2 cups), rinsed and drained
1 to 2 teaspoons sweet chili sauce
1 1/4 cups water
1 ounce sweetened dark chocolate, grated
2 tablespoons chopped cilantro
Salt and fresh-ground black pepper, to taste
Heat the oil in a nonreactive large saucepan over medium-high heat. Saute the onions, pepper, garlic and spices 5 minutes, or until onion is tender and spices fragrant.
Add the sweet potatoes, tomatoes, beans, chili sauce and water and bring to a boil. Cover, reduce heat and simmer 30 minutes. During the final 5 minutes, stir in the chocolate and cilantro. Season with salt and pepper. Ensure the potatoes are cooked through.
Makes 4 servings
