Recipe: Rachel Thompson's Cracked Gingersnap Cookies

RACHEL THOMPSON'S CRACKED GINGERSNAP COOKIES
(County Fair Winner)

1 cup white granulated sugar
1 cup brown sugar
1/2 cup lard
1 cup butter
2 eggs
1/2 cup molasses
4 cups flour
3 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground allspice (or ground cloves)
Additional white granulated sugar (for rolling cookies)

In a large mixing bowl, combine sugars, lard, butter, eggs and molasses; beat until creamy.

Sift together dry ingredients and gradually beat into creamed mixture. Form into small balls. Roll into additional sugar and place on cookie sheets.

Bake at 350 degrees for 12 to 15 minutes.

Makes 4 dozen
