During the Great Depression recipes were broadcast over the radio and were given names such as "Radio Cookies," "Radio Cake," etc. My grandmother copied down a recipe for Radio Pudding, which I am going to share with you. I absolutely love this, my family loves it, and it's perfect for a cold winter night. My kids always ask for this when they come home from college. It also goes together easily!
Radio Pudding
Step 1:
3 cups water
1 cup light brown sugar (you can use dark brown if that's all you have)
3 tablespoons butter
1/4 teaspoon salt
Step 2:
1/2 cup milk
1/2 cup sugar
1/4 teaspoon salt
1 cup flour, slightly rounded
2 teaspoons baking powder
1 teaspoon vanilla
Mix together the water, brown sugar, butter and 1/4 teaspoon salt in a large kettle or dutch oven. Bring to a boil.
Meanwhile, combine the milk, sugar, salt, flour, baking powder and vanilla in a mixing bowl.
Drop by tablespoon into the boiling syrup. Reduce heat and cook at a simmer, covered for 15 minutes. Best served warm.
I would say this serves 4 people generously.
