Recipe: Raspberry Vinaigrette (using raspberry jam) for manyhats - 3 recipes

RED RASPBERRY VINAIGRETTE
A very easy, flavor-filled dressing that goes with any kind of salad. Only three ingredients! "I like to use it with romaine, feta, toasted pecans, bacon, and red onion."
Makes 2 cups
1/4 cup olive oil
1 cup seasoned rice vinegar
1 (10 ounce) jar seedless raspberry jam
Combine the olive oil, rice vinegar and raspberry jam in the container of a blender. Process until smooth. Store in a jar in the refrigerator.
RASPBERRY DRESSING
Makes about 2/3 cup of raspberry dressing
1/4 cup fresh lime juice
3 tablespoons seedless raspberry jam
2 tablespoons hot pepper jelly
1 tablespoon salad oil
1 clove garlic, crushed and minced
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon pepper
Combine all ingredients in blender; blend until smooth. Cover and refrigerate.
RASPBERRY VINAIGRETTE
Makes 1 1/2 cups
3 TBSP seedless all-fruit raspberry jam
1/3 cup red wine vinegar
1/4 teas each salt and black pepper
1 cup vegetable oil
Put the jam into a 2-cup glass measure and microwave, uncovered, at high for 15 seconds, or just until the jam melts. Add the vinegar, salt, and pepper, and whisk until well-combined. Add the oil slowly in a thin stream, whisking constantly until it is thoroughly blended
Serve at once, or cover and refrigerate until ready to serve. Refrigerate leftover dressing, covered, for up to two weeks.
Note: Be sure to choose a seedless jam for this slightly tart, fruity vinaigrette.
