Misc.This looks complicated but it is not, and it turns out deliciously!
CHICKEN CORDON BLEU
Cut in half and pound flat with a mallet to " thickness & sprinkle with salt:
3 Boneless Chicken Breasts
Lay one slice over top each chicken piece:
6 thin slices Cooked Ham
Cut into 6 equal sticks and lay one stick over ham:
lb Swiss Cheese
Roll like jelly roll, tucking sides in. Skewer or tie rolls. Coat rolls in:
4 Tbsp Flour
Let stand 20 minutes.
Brown in frying pan adding more margarine (Butter browns too fast) as needed:
2 Tbsp. Margarine
Transfer to baking dish large enough to fit in single layer.
In same frying pan as above dissolve boullion:
cup boiling Water
3 cubes Chicken Boullion
Add:
2/3 cup Apple juice
1 -10oz can sliced Mushrooms, drained
Pour over chicken scraping all bits stuck to pan. Cover. Bake in 350 degree oven for 1 to 1-1/2 hours until tender. Remove rolls to hot platter.
Mix together until no lumps remain:
cup water
2 Tbsp flour
Stir into liquid in baking pan over medium heat until it boils and thickens. Pour over chicken. Garnish with:
cup toasted sliced Almonds
Serves 6
