Recipe(tried): REC: Fruitcake Stuffing (really!!)

Well, I took myself up on my own suggestion, and here's how it worked out:

1 12 lb turkey thawed & giblets removed
1-1/2 C. diced celery
1-1/2 C. chopped onion
1/2 C. butter, melted
2 eggs, beaten
salt & pepper
1 Entemann's fruitcake (about 8"x4"x3") - I forgot to look on the box to see how heavy it was. I'm guessing between 2-3 lbs.), diced

Saute the celery and onion in the butter 'til softened. Add the eggs, and then the fruitcake. Toss all to coat thoroughly. Stuff the turkey and roast @ 20 min. / lb. 'til done. Let the turkey set before carving, but remove the stuffing as soon as the turkey's out of the oven.

Guess what -- THE STUFFING WAS GREAT!! EVEN MY HUSBAND, WHO'S ELEVATED LOATHING FRUITCAKE TO AN ART FORM, LOVED IT!!

Soooo -- everybody, now you know what to do next Thanksgiving with this year's fruitcake . . . :-)
