Hi Shelly,

Here's a wonderful spinach salad....I make this all the time and always get rave reviews....I'm sure you will like it also.

SPINACH-ORANGE TOSS

Makes 6 servings

6 cups torn fresh spinach (8 oz)
1 (11 oz) can mandarin orange sections, drained
1 cup sliced fresh mushrooms
3 tablespoons salad oil
1 tablespoon fresh lemon juice
1/2 teaspoon poppy seed
1/4 teaspoon salt
3/4 cup toasted slivered almonds

Place torn spinach in a large salad bowl. Add mandarin orange sections and sliced fresh mushrooms. Toss lightly; cover and chill.

For dressing, in a screw-top jar combine salad oil, lemon juice, poppy seed, and salt. Cover and shake well. Chill. Shake again and pour the dressing over the spinach-orange mixture. Toss salad lightly to coat. Sprinkle toasted almonds over top. Serve immediately.
