Hi Bill:-) Here are 6 different recipes for Reuben Casseroles that have been previously posted here at recipelink. The difficult part will be choosing which one to make:-)!!

(Corned Beef and Cheese)

1 box (8 oz.) seasoned croutons
6 oz. Swiss cheese
10 oz. corned beef (sliced or chipped)
6 oz. can sauerkraut (drained)
2 eggs
1 1/2 cups milk

Butter an 11x13 casserole (or a round casserole). Layer 1/2 the croutons, 1/2 the beef, 1/2 the sauerkraut, and 1/2 the cheese.
Repeat layers and top with croutons. Beat the eggs, add milk and pour over the top. Bake at 350 to 375 degrees F. for 35 minutes.

1/2 to 1 pound corned beef, cooked, chopped
1/4 cup thousand island salad dressing
1 can sauerkraut (16 oz), drained & rinsed
1/2 pound shredded Swiss cheese
6 slices rye bread, crumbled
1/4 cup butter or margarine, melted

Place corned beef in a lightly greased 9- X 13-inch baking dish. Dot with the dressing. Spread sauerkraut over top; sprinkle with cheese. Toss breadcrumbs with the butter; sprinkle over cheese. Bake at 350 degrees for about 30 minutes, or until bubbly.
Serves 6.

1 3/4 c. drained sauerkraut
1 lb. thin sliced corn beef
2 c. shredded Swiss cheese
3 tbsp. thousand island dressing
2 c. canned or 2 fresh tomatoes
2 tbsp. butter, melted
1/2 c. butter, melted
1 c. rye wafers, crumbled
Sprinkle of caraway seeds

Put sauerkraut in bottom of 3 quart casserole. Add corn beef and cheese and sliced tomatoes. Spread on dressing after mixing the 2 tablespoons of butter in. Melt the 1/2 cup butter. Add crumbled rye crumbs and brown. Top casserole with this. Sprinkle on top caraway seed. Bake 30 minutes at 350 degrees.

Sharon Harris of Warsaw, Indiana (35 miles northwest of Fort Wayne), layers classic Reuben sandwich fixings-sauerkraut, Swiss cheese and corned beef-with seasonings and croutons in this tasty casserole.

1 32-ounce jar sauerkraut, rinsed and drained
1/2 cup chopped onion
1/4 cup snipped parsley
2 teaspoons caraway seed
4 cups shredded Swiss cheese (16 ounces)
1 1/3 cups Thousand Island salad dressing
1 pound thinly sliced cooked corned beef, coarsely chopped
1/2 cup butter or margarine
6 slices rye bread, cut into 1/2-inch cubes (5 cups cubes)

1. In a large mixing bowl, combine drained sauerkraut, onion, parsley and caraway seed.

2. Spoon mixture into an ungreased 13x9x2-inch baking dish and spread the mixture evenly.

3. Layer with half the cheese, half the salad dressing and all the corned beef.

4. Layer with the remaining salad dressing and cheese.

5. In a large skillet, melt the butter or margarine. Add bread cubes and stir till coated. Sprinkle bread cubes over the top of the casserole.

6. Bake in a 375 oven for 35 minutes or till heated through and bread cubes are browned. Makes 8 to 10 servings.

POLISH REUBEN CASSEROLE posted by Suzanne, Charlotte, NC

2 Cans condensed Cream of Mushroom soup
1 1/3 cup milk
1/2 chopped onion
1 Tbsp. Prepared mustard
2 cans (16 oz each) sauerkraut rinsed and drained
1 8 oz package of uncooked med-wide noodles
1 lb. Polish Sausage sliced into " pieces
2 cups shredded Swiss cheese
3/4 cup whole wheat bread crumbs
2 Tbsp. butter melted

Combine soup milk, onion and mustard, blend well.
Spread sauerkraut in bottom of 9x13 pan. Top with uncooked noodles. Spoon soup mixture over noodles. Top with sausage then cheese.
Combine crumbs and butter in bowl. Sprinkle over top. Cover tightly with foil.
Bake 350 for 1 hour or until noodles are done.


Chicken Reuben Casserole posted by Mike, Decatur, GA

4 to 6 boneless, skinleess chicken breasts
breadcrumbs
1 can sauerkraut
1 pkg. Swiss cheese
1 bottle low-cal Thousand Island Dessing

Bread chicken and saute until crisp, drain. Put chicken breasts in a casserole dish add 1 piece Swiss to the top of each one. Put dish under broiler until cheese melts. Remove from oven, pour dressing over chicken, then spread the sauerkraut over the top. Bake at 350 for 30 minutes.
