Recipe: Southwestern Rice (baked, using cooked rice, yogurt and cottage cheese)
Main Dishes - Rice, Grains, PastaSOUTHWESTERN RICE
1 onion, chopped
2 tbsp light margarine
5 cups cooked rice
2 cups non fat plain yogurt
1 cup low fat cottage cheese
Salt and pepper to taste
2 cans (4 oz each) diced green chilies
6 oz reduced fat cheddar cheese, shredded
Saute onion in margarine until tender. Combine with remaining ingredients, except cheese. Place in a 2-quart casserole dish. Cover with cheese.
Bake at 350 degrees F for 20 minutes.
Makes 10 servings
