Recipe: Reuben Casseroles (using hash browns) and Reuben Casserole (using rye bread)

REUBEN CASSEROLE (using frozen hash browns and corned beef slices)
1 lb frozen hash browns
1 1/2 lbs. sliced lean corn beef
1/4 cup Russian dressing
1 lb. sauerkraut, drained
8 slices Swiss cheese
Spread frozen hash browns n a buttered 9x14-inch glass baking dish.
bake in a 450F oven for 20 minutes. Remove from oven and reduce oven to 350F.
Layer corn beef over baked hash brown potatoes. Pour Russian dressing over corned beef. Layer on the sauerkraut, then the Swiss cheese.
Bake in 350F oven for 20 minutes.
REUBEN CASSEROLE (using cubed rye bread and canned corned beef)
1 can (12 oz.) corned beef
1/4 cup Thousand Island dressing
1 lb. sauerkraut, drained
1/2 lb. grated Swiss cheese
1/2 cup melted butter
6 slices Pepperidge Farm Rye Bread, cubed
Crumble corned beef into a buttered 2 quart casserole dish.
Spread on Thousand Island dressing. Spread sauerkraut over the dressing. Top with grated Swiss cheese.
Toss rye bread with melted butter and spread over top.
Bake, uncovered 30 minutes at 350F or until hot and bubbly.
