Recipe(tried): Roast Leg of Pork in the Style of Colombia

Main Dishes - Pork, Ham
I made this and started to panic that it was looking overdone. I need not have worried as when I took it out and served it the meat simply fell off, succulent and juicy, a bit like the texture of chinese duck. It tasted fab.
