Recipe(tried): Salmon Marinated in Liqueur (For LisaLouise)

I had been looking for my collection of recipes with Rum or with Liqueurs in order to find the ones I promised you. As I told before I use the Creme de Cassis if I find it. If not, I use Kirsh or Chambord or any Framboise or Strawberry Liqueur available. The important part is the delicious fruity flavor which is greatly cherished by Spaniards, Puerto Ricans and South Americans (Specially Argentinians). Here is a Salmon Recipe that is easy and very good. Is one of my favorites.

SALMON MARINATED IN LIQUEUR
serves 4

1 lb. fresh salmon (I prefer salmon filets, available at Costco or Sams at a very good price)
1 tsp freshly grated lemon peel
1/4 cup lemon juice
4 tbsp Creme de Cassis or Kirsh
1 tbsp oil
salt and pepper to taste
1 tbsp dried rosemary (I prefer dried oregano, crushed between my hand or crushed in a mortar)
1 clove crushed garlic

Rinse fish and pat dry. Cut into 4 pieces. In a shallow dish, combine lemon peel, lemon juice, oil, Creme de Cassis, salt & pepper, and garlic. Add fish and toss to coat. Let marinate at room temperature for 1 hour, turning occasionally. Drain fish, and reserve marinade. Rub fish pieces with rosemary. Brush with marinade. Broil fish 4 inches form heat for 5 minutes. Turn pieces over, brush with marinade and broil 5 minutes longer, until done. Garnish with additional rosemary. (For the garnish I use chopped fresh parsley or chopped fresh cilantro)

Sometimes I add 1 tsp Brown sugar to the Marinade. It helps to the golden color and sweet and sour taste.
