Recipe(tried): Chicken in Margarita Sauce

CHICKEN IN MARGARITA SAUCE
serves 6

Marinade:
1 tbsp finely grated lime peel
1/4 cup freshly squeezed lime juice
1/4 cup Tequila
1 tbsp cooking oil
2 cloves garlic, crushed
2 tbsp fresh snipped cilantro
2 finely chopped green onions
1/2 tsp black pepper

2 onions
2 red bell peppers
2 lbs. boneless chicken breasts
cilantro to garnish
limes to garnishMix all of the marinade ingredients together in a large bowl. Wash the chicken, and pat dry.
Pierce each side of the chicken 10-20 times with a sharp knife, but do not cut through the pieces. Marinate chicken in the tequila-lime mixture, covered, for 2 hours, stirring often. Quarter the onions, and cut the bell peppers into strips. Alternate pieces of onion and bell pepper on barbecue skewers. Grill the chicken and vegetable skewers over a barbecue or indoor grill, basting chicken with remaining marinade. Serve garnished with cilantro and lime.
