Recipe: Roasted Broccoli with Lemon Bread Crumbs

ROASTED BROCCOLI WITH LEMON BREAD CRUMBS

"A more healthful option than broccoli smothered in cheese sauce, this side dish goes beautifully with just about anything from roast chicken or beef to pork tenderloin or fish."

2 pounds broccoli, stemmed, cut into 2-inch florets
3 tablespoons olive oil, divided use
Salt and pepper
1/2 small red onion, finely chopped
1/2 cup fresh bread crumbs
2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice

Preheat oven to 425 degrees F.

Toss broccoli with 2 tablespoons oil in a large bowl. Season to taste with salt and pepper. Arrange on baking sheet with rim.

Roast until broccoli is crisp-tender and lightly browned, about 20 minutes.

Meanwhile, heat remaining 1 tablespoon oil in a heavy medium skillet over medium-high heat. Add onion. Saute until beginning to brown, about 3 minutes.

Add bread crumbs. Saute until golden brown, stirring frequently, about 3 minutes. Remove from heat.

Stir in lemon zest. Season to taste with salt and pepper.

Makes 6 servings
