STIR-FRIED HOT AND SOUR CABBAGE
1 medium head cabbage (about 1 lb.)
1 tablespoon cornstarch
1 tablespoon cold water
3 tablespoons vegetable oil
2 large cloves garlic, finely chopped
1/4 cup catsup
1 teaspoon red pepper sauce
1 teaspoon salt
1/2 cup chicken broth
3 green onions with tops, cut in 2-inch pieces
Cut cabbage into 1 1/2-inch pieces. Set aside.
Mix cornstarch and 1 tablespoon cold water. Set aside.
Heat wok or large frying pan; add vegetable oil. Add cabbage and garlic and stir fry for 1 minute.
Add catsup, pepper sauce and salt and stir fry for 1 minute.
Stir in chicken broth and heat to boiling. Stir in cornstarch/water mixture; cook and stir until thickened about 10 seconds. Stir in green onions and serve.
