SUPREME SCALLOPED CORN
1 (16 ounce) can cream-style corn
1 cup milk (may use fat free)
1 egg, beaten
1 cup cracker crumbs
1/4 cup minced onion
3 tablespoons chopped pimientos (optional)
3/4 teaspoon salt
dash ground black pepper
1/2 cup Ritz cracker crumbs
Preheat oven to 350 degrees F. Grease an 8-inch round casserole dish.
Heat corn and milk together.
Remove from heat and gradually stir in egg. Add cracker crumbs, onion, pimiento, salt, and pepper; mix well. Pour into prepared baking dish. Sprinkle with Ritz cracker crumbs.
Bake at 350 degrees F for 20 minutes.
Makes 6 servings
