Recipe: Roasted Habanero Salsa

I have not made this but a friend made it and said she would cut back the number used before she made it for canning. Said it was just too hot to enjoy so might want to make a batch up before increaseing amounts to can.

Roasted Habanero Salsa

1 tablespoon olive oil
1 teaspoon garlic, minced
5 plum tomatoes, halved
salt and pepper to taste
10 habanero peppers, stemmed
1/4 cup olive oil
1/4 cup lime juice
1/4 cup cilantro, chopped

Combine the tablespoon olive oil and garlic and mix well. rub tomato halves with this mixture, sprinkle with salt and freshly cracked pepper and roast in a 500 degree oven until they begin to take on some serious color, about 15-20 minutes. Remove from oven and let cool to room temperature and dice. Meanwhile grill the habanero peppers over a medium hot fire until slightly colored 2-3 minutes. Remove and mince. In a medium bowl, combine tomatoes, peppers, 1/4 cup olive oil, lime juice and cilantro. Mix well. Cover and refrigerate.
