Recipe(tried): Roasted red potatoes

Side Dishes - Potatoes
I usually roast red potatoes and they keep their color quite nicely. This recipe is a family favorite.

Roasted Red Potatoes

1 lb small Red Potatoes
1 tbs Olive or Vegetable Oil
1/2 tsp Salt
1/8 tsp Pepper
2 tbs grated Parmesan Cheese

Cut the potatoes into 1/4 inch thick slices; toss with oil.
Place in a single layer in a 13 x 9 inch baking dish sprayed with cooking spray.
Sprinkle with salt, pepper and Parmesan Cheese.
Cover tightly with foil.
Bake at 350 degrees for 40 minutes or until tender.
