WESTERN BEANS AND RICE
1 cup long-grain rice, uncooked
1/2 tsp olive oil
1 cup chopped onions
1 cup sliced celery
1 clove garlic, minced
1 (15 oz) can pinto beans, drained and washed
1 (8 oz) can no-salt-added tomato sauce
1/2 cup water
1 tbsp ketchup
1 tsp chili powder
1/4 tsp hot pepper sauce
Prepare rice according to package directions.
In a skillet, heat oil over medium heat. Add onions, and celery. Cook and stir until crisp-tender.
Add garlic, pinto beans, tomato sauce, water, ketchup, chili powder, and hot pepper sauce. Heat thoroughly, stirring occasionally.
Serve over hot rice.
