Rockfish is commonly known as Striped Bass). Or, do you mean Red Snapper? Recipes using Striped Bass are limited. I found a wonderful chowder to which you can add some Jalapeno & maybe you will have your recipe. If you are referring to Red Snapper, then, there are a few good recipes using jalapenos that I can share with you. Just let me know if you are interested.

ROCKFISH (STRIPED BASS)CHOWDER

1 pound rockfish fillets
2 Tbsp. butter or margarine
1/2 cup onion
2 cups cubed potatoes
1 cup boiling water
2 cups milk
1 (8 oz) can creamed style corn
salt and pepper, to taste

Cut fillets to one inch squares; set aside.

Melt butter and cook onions in a 3 quart pot until soft.

Add potatoes, 1 cup boiling water, and fish. Cover and simmer for 15 minutes or until potatoes are tender.

Add milk and corn; heat thoroughly.

Add salt and pepper to taste. Serve at once while hot.
