Recipe: Romaine Salad with Lemon-Walnut Dressing (using walnut oil and pears)

ROMAINE SALAD WITH LEMON-WALNUT DRESSING

FOR THE DRESSING:
1/2 to 1/3 cup coarsely chopped walnuts
1/2 cup walnut oil
3 tbsp. lemon juice
2 tbsp. vinegar
1/2 tsp. salt
1 dash garlic salt or pepper
1/4 tsp. crushed tarragon
freshly ground black pepper
1/2 tsp. sugar
FOR THE SALAD:
2 quarts broken romaine leaves
2 to 3 scallions, sliced in thin circles
2 to 3 winter pears (D' Anjou Bartlett or Comice)

TO MAKE THE DRESSING:
Combine all ingredients in jar with tight lid and shake to blend. Prepare dressing about 24 hours in advance if possible for flavor blending.

TO MAKE THE SALAD:
Core, peel and slice pears. In large salad bowl or on individual plates, arrange romaine leaves, chopped scallions and pear slices. Drizzle with dressing.
