GRANDMA SMUCKER'S COFFEE CAKE

Servings: 12-16
1 3/4 cups brown sugar
1 1/4 cups flour
5 tablespoons shortening
1 teaspoon cinnamon
4 eggs
pinch of salt
1/8 teaspoon baking powder
1 teaspoon vanilla extract
1/8 teaspoon baking soda
1 cup buttermilk
vegetable oil cooking spray
Preheat oven to 350 degrees.
Mix brown sugar, flour, and shortening into fine crumbs by hand. Measure out 1 cup of crumbs and add 1 teaspoon of cinnamon. Reserve these crumbs for the topping.
Mix eggs, salt, baking powder, and vanilla with an electric mixer on slow speed. Add the plain crumbs and mix well.
Dissolve baking soda in buttermilk and add to mixture. Mix well and pour into a 9-hy-13-inch pan sprayed with cooking spray. Sprinkle the remaining cinnamon crumbs on top.
Bake for approximately 40 minutes or until cake tests done. Remove from oven and cool slightly before cutting.
