Recipe: Potato Latkes for Hanukkah

POTATO LATKES FOR HANUKKAH

6 med. grated potatoes
1/2 c. all-purpose flour
2 tsp. salt
2 tsp. onion powder (or to taste)
4 eggs, beaten

Peel, grate and drain enough potatoes to measure 6 cups. Add remaining ingredients and mix well. Fry by dropping from a soup spoon into a hot skillet with oil, enough to "sizzle" well. Fry until golden brown and turn. Drain excess grease. Serve warm with applesauce and sour cream. Latkes may be made ahead, frozen and reheated in a hot oven to serve. Recipe serves 6.
