Madam Cake Lady:
Good day to you. Many years ago when I attended culinary college, our chef insructor provided us students with a recipe for cake crumbs. So as to not let them go to waste. I remembered that recipe that we recieved in our cake class semester. I looked for that recipe & I just found it amongst my old school papers that I never discarded. I have never made this recipe however.
IT IS CALLED "RUM BALLS"
16 oz heavy whipping cream
2 oz rum
2 oz melba sauce. (If you need a recipe for this, post back & I will provide you with one.)
Cut-up cake into 1 inch squares. Add melba sauce to cream, mix & whip to stiff peaks. Rum may be added into whipped cream when completed by folding it in. Then fold crumbs into the concoction & blend. You can use a ice-cream scooper to dispence this dessert into the serving dish.
Here is another way to use the cake crumbs.
Apply the crumbs around the circumfrence of a cake after you apply a coating of say pastry cream or whatever you may have including a preserve or jam. The crumbs will attach very well. I n some cases you can also apply to the top of the cake.
