Recipe: Rumbledethumps (Scottish, mashed potatoes and cabbage, serves 2)

RUMBLEDETHUMPS

"Rumbledethumps may sound like a celebrity baby name or a fairy tale beast, but it is actually a potato dish from the Scottish borders. The recipe features thumped (mashed) potatoes and cabbage rumbled (mixed) with seasonings and butter then topped with cheese, and broiled until brown."

1 pound potatoes, roughly diced.
1 1/2 cups cabbage finely shredded
1 large onion, sliced finely
4 tablespoons butter
4 tablespoons white cheddar cheese, divided use

Preheat oven to 400 degrees F.

Boil potatoes in a medium sized pan. When the potatoes are soft, drain and place back in the pan. Mash the potatoes evenly.

Place the butter in a frying pan over high heat and melt. Add cabbage and onion and turn until evenly coated in the butter. Heat for a few minutes until the cabbage and onion wilts. Do not brown the vegetables.

Add roughly half the cheese and all the potatoes to the cabbage mixture. Stir evenly over a simmering heat until the cheese has melted. Season with salt and pepper.

Place in a casserole dish and sprinkle with remaining cheese.

Place in the oven and bake until the cheese has melted and the top is golden. Serve immediately.

Makes 2 large servings
