Try this one... I too had this delicious cake quite a few years ago at a cafe in Melbourne and have been searching for the recipe ever since. I came across this one which sounds just like the one I had....so hopefully it tastes as nice.
RUSSIAN PUSHKA (CHRISTMAS DESSERT)
4 pkg. (8 oz./250g each) cream cheese, softened
7 oz./200ml sour cream
1 cup castor sugar (superfine sugar)
2 cups marinated sultanas (soaked for at least 10 days in alcohol i.e. brandy, whiskey, sherry or rum).
1 cup marinated currants (soaked as sultanas)
1/2 cup crystallized ginger pieces, halved
1/2 cup dried apricots, chopped
1 cup sliced almonds
1 (6 oz.) package chocolate chips
2 oranges worth of zest (use fine side of grater)
FOR DECORATING:
chocolate chips, slithered almonds, cherries (anything festive)
Mix cream cheese with sour cream and then add sugar, mix till smooth. Add everything else.
Line a baking ring tin with two layers of Plastic wrap; smooth mixture around ring tin.
Set in freezer overnight, then keep in refrigerator or freezer till ready to serve.
Decorate with chocolate chips, slithered almonds, cherries anything festive.
NOTE: This recipe is relaxed, so feel free to swap or omit ingredients but the basic 3 cups of marinated fruit are standard, the orange zest helps balance the richness.
