Recipe: Watermelon and Kiwi Skewers with Strawberry Cream (blender)

WATERMELON AND KIWI SKEWERS
WITH STRAWBERRY CREAM


3/4 cup sliced strawberries
1/2 cup vanilla low-fat yogurt
1 tablespoon (1/3 reduced-fat) cream cheese
1 teaspoon fresh lemon juice
1/2 teaspoon powdered sugar
24 (1/2-inch) watermelon balls
2 kiwifruit, peeled, cut*

In blender, puree strawberries, yogurt, cream cheese, lemon juice and sugar. Cover; chill.

Thread 1 watermelon piece and 1 kiwifruit piece onto each of 24 toothpicks or 6-inch skewers.

Serve with sauce.

*To shape the kiwifruit, cut a thin vertical slice off both ends of the fruit, revealing the flesh. Peel by cutting vertical strips from one end to the other. Cut each kiwifruit lengthwise into quarters. Cut each quarter crosswise into thirds.

Makes 24 kebabs and 1 cup sauce for eight servings
