SAM WILSON'S LONDON BROIL
From: Sam Wilson's Meat Markets Restaurants, KS
Makes 4 servings
5 cups cold water
1 1/3 cups Burgundy wine
3 tablespoons red wine vinegar
3/4 cup thinly sliced white onions
2 cloves garlic, crushed
2 teaspoons dried thyme leaves
1 teaspoon ground oregano
2 teaspoons ground black pepper
2 teaspoons salt
1 beef flank steak, about 1 to 1 1/2 pounds
Sam Wilson's Steak Butter (recipe follows)
Combine water, wine and vinegar in a mixing bowl. Add onion slices and garlic. Blend in seasonings.
Score the beef diagonally across the grain, on both sides, with a sharp knife. Place meat in a shallow dish. Pour marinade over meat. Cover and refrigerate 24 hours.
When ready to cook, remove meat from marinade and discard marinade. Place meat in broiler pan and place under broiler or place meat on grill over hot coals. Cook about 7 minutes a side or until done as desired, turning to cook evenly.
Thinly slice meat across the grain and serve with Sam Wilson's Steak Butter (recipe follows).
SAM WILSON'S STEAK BUTTER
Makes 16 servings
12 tablespoons margarine, softened
12 tablespoons butter, softened
2 green onions, finely minced
1/4 cup fresh minced parsley
4 teaspoons Maggi seasoning
2 teaspoons Worcestershire sauce
1/4 teaspoon lemon extract
1/4 teaspoon dry mustard
Place softened butter and margarine in a mixing bowl. Add green onions and parsley and stir to mix well. Gradually beat in remaining ingredients. Store covered in refrigerator as long as 1 month.
Spoon over cooked steak.
